Italian Potato and Green Bean Salad


3 lbs of patatoes, scrubbed and cut in quarters

1 lb of green beans, blanched and cut into 1/2 inch long pcs.

3 cloves of garlic sliced thin

extra virgin Olive Oil

salt and pepper


Cook potatoes until just tender.  Drain and let cool

In a large bowl combine; Potatoes, Green Beans, Garlic.  Add enough Olive Oil to coat the Potatoes and Green Beans evenly without saturating.  Season with salt and pepper to taste.  Served at room temperature.  In the Unlikly event you have leftovers, prepare a Marinara sauce and combine with the potato and green beans.  Serve warm with lots of good Italian bread.
