Beet Bruschetta

 

     From Mom Cantelmo's Kitchen  This is a great starter for Summer get togethers.  We toast some good Italian bread, sliced thin, and enjoy great conversation with close friends. In addition to its great taste it is very healthy.

4 Medium Beets

1/2 yellow onion minced

2 Tablespoons fresh basil snipped

2 cloves garlic, pressed

1/4 cup Olive Oil

2 Tablespoons Balsamic Vinegar

salt and pepper to taste

     Remove tops (save to use later) wash thoroughly, wrap beets in foil and place in an oven at 450 degrees for about 45 minutes or until tender.  Remove from oven and let stand 15 minutes.  Unwrap foil and peel beets and dice into small pieces.  Put in medium bowl add onion, garlic, basil, oil and vinegar.  Toss and add salt and pepper to taste.  Have a basket of thinly sliced Italian bread toasted and ready to watch your family or guest to enjoy.  A great starter for any meal.

Andre, Got your address from Mom, Cantelmo. Pat told me of your passion. I have been a part of different CSA's for a few years. I'm now with Howling Wolf Farm as a member and one of 20 families that hope to have the farm supply all our food needs. we are in our first year and it is an adventure.
